Kenwood Yulupa Cuvée Brut is a light and refreshing, well-balanced sparkling wine with fruit flavors and aromas of citrus, pear and peaches, followed by a nuance of spice. Made in the traditional méthode champenoise style, this sparkling wine is a blend of Chenin Blanc, French Colombard, Chardonnay and Pinot Noir from select vineyards sourced from the diverse microclimates of California. The cuvée wines used to make Yulupa Cuvée Brut are made in the traditional manner, by very gently pressing grapes harvested a little before full maturity, typically at less than 20 brix. It is this gentle pressing, followed by a cool fermentation, that yields a very delicate style cuvée wine while still retaining the essence of the fruit. After a complex blending process and traditional secondary fermentation, the wine is allowed to age on the yeast for about 10 months. After the wine undergoes disgorging, a small amount of sugar called “dosage” is added to give Yulupa Cuvée Brut its refreshing, medium dry finish.
