Great for puddings & fruit pies. Microwavable. Shake box before using. Tapioca Pudding: 1/3 Cup sugar; 3 Tbsp Minute Tapioca; 2-3/4 Cups milk; 1 Egg, well beaten; 1 Tsp vanilla. Mix sugar, tapioca, milk and egg in medium saucepan; let stand 5 minutes. Cook on medium heat, stirring constantly, until mixture comes to full boil (a boil that doesn't stop bubbling when stirred). (Pudding thickens as it cools.) Remove from heat. Stir in vanilla. Cool 20 minutes; stir. Serve warm or chilled. Store leftover pudding in refrigerator. Makes 6 (1/2-cup) servings. Note: For creamier pudding, place plastic wrap on surface of pudding while cooling. For bets results, use 2% reduced fat or whole milk. Fat free, 1% lowfat or lactose-reduced milk can also be used.
